    A lean, mean fighting machine. That’s exactly how you’ll feel after you try this cabbage rich, lean chicken infused dish. That’s dinner sorted. Only 98 problems to go. Chicken is a great source of protein – building block of skin, muscle, nails and hair. Kale is rich in Vitamins A, C, K and has more iron than the equivalent weight in steak. Bok-choy is packed with antioxidants and regarded as one of the world’s healthiest foods.

    Recipe

    Preparation: 20 minutes
    Cooking: 15 minutes

    Ingredients / Serves 2:

    • 1tbsp fish sauce
    • 1.5tsp soy sauce
    • 2tsp corn starch
    • 2 garlic cloves
    • 3 chicken breasts
    • 2tsp coconut oil
    • 1 small red onion
    • 2 fresh red chillies
    • 1 cup bok choy stems
    • 1 cup bok choy greens
    • 1 cup curly kale
    • 4tbsp Cashew nuts
    • 1.5 cup fresh basil
    • 1 lime

    Method:

    • Step 1: To a large bowl, add 1tbsp fish sauce, 1.5tsp soy sauce, 2tsp corn starch and whisk.
    • Step 2: Mix in 2 finely chopped garlic cloves and 3 skinless chicken breasts sliced into bite size pieces. Let that marinate.
    • Step 3: In a large non-stick pan set over medium-high heat, add 1tsp coconut oil. After 1 min, add 1 red onion thinly sliced and 2 red chillies sliced crosswise. Cook until onion edges brown.
    • Step 4: Add 1cup thinly sliced bok-choy stems (we’ll need the green parts later), cook for 1 min, then add the marinated chicken and 1cup of chopped curly kale. Stir until chicken nearly cooked (6 mins).

    • Step 6: Transfer to 2 plates, sprinkle with basil leaves, 0.5cup of roughly chopped cashews and serve.
