Recipe
Preparation: 20 minutes
Cooking: 15 minutes
Ingredients / Serves 2:
> 1tbsp fish sauce
> 1.5tsp soy sauce
> 2tsp corn starch
> 2 garlic cloves
> 3 chicken breasts
> 2tsp coconut oil
> 1 small red onion
> 2 fresh red chillies
> 1 cup bok choy stems
> 1 cup bok choy greens
> 1 cup curly kale
> 4tbsp Cashew nuts
> 1.5 cup fresh basil
> 1 lime
Step 1 To a large bowl, add 1tbsp fish sauce, 1.5tsp soy sauce, 2tsp corn starch and whisk.
Step 2 Mix in 2 finely chopped garlic cloves and 3 skinless chicken breasts sliced into bite size pieces. Let that marinate.
Step 3 In a large non-stick pan set over medium-high heat, add 1tsp coconut oil. After 1 min, add 1 red onion thinly sliced and 2 red chillies sliced crosswise. Cook until onion edges brown.
Step 4 Add 1cup thinly sliced bok-choy stems (we’ll need the green parts later), cook for 1 min, then add the marinated chicken and 1cup of chopped curly kale. Stir until chicken nearly cooked (6 mins).
Step 5 Stir in the bok-choy greens, 1.25cup of basil leaves and juice of 1 lime. Once greens wilt…
Step 6 Transfer to 2 plates, sprinkle with basil leaves, 0.5cup of roughly chopped cashews and serve.
